養生美食好料理【糖醋紫菜素雞卷】 Sweet and Sour Vegetarian Chicken Roll (Bilingual)

材料 :
 紫菜 2片
 素雞 2條
 西芹 1條
 紅蘿蔔 ½個
 生粉 2湯匙

糖醋汁 :
 紅燈籠椒 ¼個
 黃燈籠椒 ¼個
 茄汁 40克
 砂糖 30克
 白醋 50毫升

做法 :

1. 紅蘿蔔去皮後切絲。

2. 西芹切絲。

3. 素雞切去頭尾,將素雞片薄成1/2厘米厚。

4. 紅黃燈籠椒切幼粒。

5. 紫菜剪開一半。

6. 中火燒熱鍋,加少許油,炒香紅蘿蔔及西芹至軟身,盛起放涼備用。

7. 將素雞平放在紫菜上,中間放上紅蘿蔔及西芹,捲起。

8. 紫菜沾少許水黏著,然後將紫菜卷平均沾上生粉。

9. 中火燒熱鍋,加少許油,將紫菜卷煎至金黃色,取出放涼後對角斜切開。

10. 準備甜酸汁,將茄汁、砂糖及白醋混合。

11. 將甜酸汁煮至微滾後煮5分鐘,加入紅黃燈籠椒快炒。

12. 將甜酸醬淋上紫菜卷即成。

Ingredients :
 2 sheets nori (dried seaweed)
 2 logs vegetarian chicken (bean curd)
 1 stalk celery
 ½ carrot
 2 tbsp corn starch

Sweet and Sour Sauce:
 ¼ red bell pepper
 ¼ yellow bell pepper
 40g ketchup
 30g sugar
 50mL white vinegar

Direction
 
1. Peel and cut the carrot into strip.

2. Slice the celery into strip.

3. Trim the ends off the vegetarian chicken. Cut the chicken about ½ cm thick, do not cut through. Move the knife up and down and slowly roll the chicken to form into a sheet.
 
4. Small dice the red and yellow bell pepper.
 
5. Cut the nori sheet into half.
 
6. In a pan, add some oil on a medium heat. Sauté the carrot and celery until soft. Let cool and set aside.
 
7. Place the chicken sheet over the nori sheet. Add the carrot and celery in the middle and roll it up.
 
8. Use some water to seal the edge to secure. Dust some corn starch over the roll.
 
9. In a pan, add some oil on a medium heat. Slight sear the roll until golden brown. Let cool and cut into diagonal.
 
10. To make the sweet and sour sauce, combine the ketchup, sugar and white vinegar together.
 
11. Bring it to simmer and cook for 5 minutes, add the red and yellow pepper, quick stir.
 
12. Pour it over the roll and serve.
